Domaine La Borderie is a family business in Bar-sur-Seine (Côte des Bar), founded in 2013 by Simon and Marie Normand, who continue the tradition of their parents Jean-Louis and Odile Normand. The estate is known for its modern approach, ecological responsibility and champagnes with a strong terroir identity.
History and Philosophy
The estate is built on a heritage of demanding winegrowers; the grandparents were pioneers in the local cooperative. Simon and Marie Normand decided to start their own house, taking over 11 hectares of family land. Their philosophy combines respect for the past with innovation: they produce with minimal impact on the environment and emphasise the unique history of each plot. The estate is recognised for its Haute Valeur Environnementale (HVE) certification and in 2014 was the first in Champagne with the Viticulture Durable en Champagne certificate.
Vineyards and Terroir
The vineyards lie at the confluence of the rivers Arce and Seine, on the slopes of both valleys. The soils are diverse and rich in argilo-calcaire (clay-limestone). The grape varieties mainly include Pinot Noir (70%), followed by Chardonnay, Pinot Meunier and Pinot Blanc. Many vineyards consist of old vines (up to 50 years), which contributes to the complexity and concentration of the wines. The estate also actively plants trees for biodiversity (e.g. 1,300 trees planted in 2021) and uses no herbicides or insecticides.
Method and Vinification
Each plot is harvested and vinified separately to preserve the specific characteristics of the micro-terroir.
- Fermentation: Mainly in stainless steel cuves for freshness, but also in oak barrels for complexity.
- Selection: Only the best juices of cuvée are used.
- Ageing: The champagnes age on fine lees with a minimal dosage to emphasise the purity of the fruit and the expression of terroir.
- Visits: The estate offers wine tourism, including tastings and accommodation in two Gîtes de France, with a capacity of up to 25 people per group.
Champagnes and Cuvées
Domaine La Borderie produces a range of champagnes known for their elegance and structure:
- Brut Trois Contrées: A blend of Pinot Noir, Chardonnay and Pinot Blanc, reflecting the diversity of the estate.
- La Confluente: A Blanc de Blancs (mainly Chardonnay, sometimes with Pinot Blanc), known for its finesse, citrus notes and salty finish.
- Val Moré: A Blanc de Noirs (100% Pinot Noir), deep and structured, often vintage.
- Douce Folie Rosé: A rosé made by the saignée method from old Pinot Noir vines, with notes of red fruit and violets.
- De Quoi Te Mêles-Tu?: A monocépage 100% Pinot Noir, a pure expression of the terroir.
- Les Devoix: A Coteaux Champenois Rouge (still red wine), made in the Burgundian style with maceration and ageing in oak barrels.
