Champagne Bonnet-Gilmert is a family business in Oger (Côte des Blancs), founded in 1910 by Émile Gilmert. The current name arose in the 1950s through the marriage of Colette Gilmert and Robert Bonnet. Since 2015 the house has been run by the granddaughters Aude Vauban and Carla Bonnet.
Vineyards and Terroir The estate manages approximately 4.5 to 7 hectares of vineyards, exclusively planted with Chardonnay. The grapes come from Grand Cru soils around Oger, Le Mesnil-sur-Oger and Avize. The soil consists mainly of chalk (Campanian) and limestone. Viticulture follows a reasoned approach (raisonnée) to protect the environment.
Approach Bonnet-Gilmert is a Récoltant-Manipulant (RM), which means that only its own grapes are used. Vinification often takes place in oak barrels to give character, with temperature-controlled fermentation. The champagnes age for at least 3 years in the cellar, some cuvées for up to 10 years.
