History The champagne house Bonnaire is based in Cramant, a Grand Cru village on the Côte des Blancs, and has existed since 1932. Its origins lie with Fernand Bouquemont, who bottled his first bottle then, after which his son-in-law André Bonnaire built up the estate. Today it is run by the fourth generation, the brothers Jean-Etienne and Jean-Emmanuel Bonnaire, who continue the philosophy of their father Jean-Louis.
Vineyards and Approach The estate owns 22 hectares of vineyards, mainly planted with Chardonnay, with plots in Cramant, Bergères-lès-Vertus and Fossoy. Viticulture has been fully certified organic since the 2023 harvest, with the team experimenting with Kunekune pigs for natural weed control. Vinification takes place at low temperatures in stainless steel tanks, with full malolactic fermentation; dosages have generally been lowered to Extra Brut or Brut Nature.
Champagnes and Specialities Bonnaire is known for its fresh, energetic Blanc de Blancs and experimental cuvées:
- Variance: A Chardonnay that ages in oak barrels.
- Cramant Nature (Coteaux Champenois): A still, non-sparkling white wine from old vines (Les Marmouzes), fermented in 228L oak barrels.
- Cramant Vintage: A pure, long-keeping Grand Cru Blanc de Blancs.
- Tradition & Rosé: Classic blends with a modern, precise style.
The estate is also connected with Champagne Paul Clouet in Bouzy. Visits and tastings are possible by appointment at 120 rue d'Epernay, 51530 Cramant.
