Augustin is a biodynamic champagne estate in Avenay-Val-d'Or, run by Marc Augustin and his wife Emmanuelle. The house continues the work of two winegrowing families with nine generations between them. Marc's great-grandmother Andrée Lefèvre began making her own champagne at the start of the 20th century, and his father Jean Augustin never used herbicides.
Vineyards
- Two Premier Cru terroirs: Avenay-Val-d'Or (Montagne de Reims) and Vertus (Côte des Blancs), planted with Pinot Noir and Chardonnay.
- Organic since 2012, biodynamic across the whole estate since 2013, with Demeter certification in 2016.
- Work follows the lunar calendar, with braiding instead of trimming, and flax and legumes planted between the rows.
Methods
- No chaptalisation, no added yeasts, no cold stabilisation and no filtration; very little sulphur.
- Vinification in enamelled tanks, casks and jars made from Montagne de Reims wood, and terracotta amphorae.
Champagnes The cuvées are inspired by the four elements: Terre (100% Pinot Noir), Air (Pinot Noir and Chardonnay) and Feu, the sulphur-free Cuvée 116 (Pinot Noir and Blanc de Blancs), the rosé O2 Rosée, Gaïa (aged for 24 months buried in its parcel of origin) and Cœur Saphyr (100% Pinot Meunier, aged in dolium).
