Champagne Philippe Moutardier is a family business based in Chézy-sur-Marne (Aisne), on the southern slopes of the Marne Valley. The business is run by Philippe Moutardier, who inherited his passion for wine from his grandmother; she began buying vineyards in the 1960s and later gave Philippe the management. The business was legally established as an entrepreneur individuel on 1 January 1987 and carries the brand name La bulle de Porcelaine.
The vineyards consist mainly of the three permitted Champagne grape varieties: Pinot Meunier, Pinot Noir and Chardonnay. The grapes are harvested by hand in September and carefully transported in ventilated crates to preserve the integrity of the bunches.
The approach comprises a careful production process:
- The grapes are pressed per cru and per variety within six to eight hours of harvest.
- Fermentation takes place in vats (7-10 days), followed by blending of the "vins clairs".
- After addition of the liqueur de tirage, the second fermentation takes place in the bottle, with a minimum ageing time of 3 years.
- The champagne house uses the dégorgement à la glace process (thawing at -25°C) and a carefully studied liqueur de dosage.
The offering includes four main-line cuvées: Brut Tradition, Brut Demi-Sec, Brut Rosé and Brut Réserve. In addition the house offers the exclusive "Porcelaine" line, recognisable by its Limoges porcelain stoppers, which are popular with collectors. Specific versions within this line include Cuvée Santons Fouque, Cuvée Centenaire, Cuvée Aphrodite and Cuvée Kaolin Rosé.
