Champagne Pascal Walczak is a family business in Les Riceys (Côte des Bar, Aube), founded in 1973 by Pascal Walczak. His son Sébastien joined the business in 2003, with the focus on preserving local terroir quality and sustainable viticulture.

Vineyards and Terroir

• The estate covers 10 hectares of vineyards, located exclusively within the territory of Les Riceys.
• The soil is mainly Kimmeridgian (marl and limestone), which contributes to the expressiveness of the grapes.
• The grape varieties are predominantly Pinot Noir and Chardonnay, complemented by small plots for the production of Rosé des Riceys and Coteaux Champenois.
• Les Riceys is the only village in Champagne with three AOC statuses (Champagne, Rosé des Riceys, Coteaux Champenois).

Approach and Sustainability

• The house is certified Terra Vitis and follows an HVE (Haute Valeur Environnementale) approach.
• No herbicides, insecticides or weedkillers are used; the vineyards are maintained by hand or mechanically.
• For vinification a temperature-controlled vat room is used to ferment each vineyard separately and optimise quality.
• Some champagnes, such as the Cuvée Cyriès, are aged in oak barrels (demi-muids) for more roundness and complexity.
• The champagnes age 24 to 36 months on the lees in a natural cellar with constant humidity and temperature.

Champagnes and Products

• Cuvée Brut Prestige: The flagship cuvée, composed of 75% Pinot Noir and 25% Chardonnay, with aromas of dried fruit and brioche.
• Cuvée Cyriès Millésimé: A vintage cuvée (e.g. 2017) with a balanced blend of Pinot Noir and Chardonnay, aged in oak barrels for aromatic complexity.
• Blanc de Noirs: A champagne made exclusively from black grapes.
• Rosé des Riceys: A rare rosé wine (not champagne) that is specific to Les Riceys, known for its fine taste and ageing potential.
• Other cuvées: Including Soléra Extra-Brut, Rosé de Macération (saignée method) and Blanc de Blancs.
