Champagne Apollonis, run by Michel Loriot in Festigny (Marne Valley), is a family-run business that goes back to 1675 (12th generation). The estate covers 7 hectares and is certified HVE Level 3 for high environmental standards.
- Vineyards: The grape varieties are 80% Meunier, 18% Chardonnay and 2% Pinot Noir.
- Winemaking: Loriot, president of Vignerons Indépendants, practises "ultra" integrated farming. A distinctive element is protéodie: playing classical music (such as Beethoven's Pastoral Symphony) in the cellar to influence the fermentation and proteins.
