Champagne​‌​ Maryse Fèvre is a Récoltant Manipulant (grower-producer) based in Villiers-le-Bois (3 Grande Rue, 10210), about 40 km from Troyes. The estate has produced AOC Champagne since 1995, although the first vineyards were already planted in 1987.

History and Family

The Fèvre family has been active in agriculture for several generations. Maryse Fèvre inherited AOC Champagne land from her parents, after which her husband Dominique Fèvre specialised in viticulture in order to obtain the planting rights. Their daughter Clémence Fèvre joined the business in 2019 after her oenological studies, thereby securing the family succession. In 2022 production amounted to approximately 13,000 bottles a year.

Vineyards and Production

The estate is based in Bragelogne, in the Côte des Bars. In 2002 the vineyards covered 1 hectare and were later expanded with a rented plot in Avirey Lingey. The winegrowers work closely with certified oenologists for guidance on the harvest, the blending and the disgorgement. Every batch is checked by the AIDAC (Association d'Inspection des Appellations Champagne) to guarantee the AOC standards.

Winemaking and Champagnes

The champagne is aged in a temperature-controlled cuverie in Bragelogne. After the second fermentation the wine is bottled for the prise de mousse in the cellar, followed by a resting period and disgorgement on pupitres. The champagnes are best enjoyed at 7-8°C. The range consists mainly of Brut and Demi-Sec, with a Rosé that was available from 2023. Direct sales and tastings are possible at the estate by appointment.
