Joël Falmet is a récoltant-manipulant in Rouvres-les-Vignes, a village on the border of the Aube and Haute-Marne, between Bar-sur-Aube and Colombey-les-Deux-Églises, not far from Clairvaux Abbey. Joël Falmet founded his own brand and makes his champagnes himself.
Vineyards The estate covers eight hectares, planted with Pinot Noir, Chardonnay, Pinot Meunier and Petit Meslier. As a member of the Terra Vitis federation, he works to an annually audited set of specifications: mechanical weeding, grass cover between the rows and reasoned control of fungal diseases, with care for the soil and biodiversity.
Method The grapes are hand-picked plot by plot and pressed separately in traditional low-pressure presses. Vinification takes place in barrels in his own cellar; the blends are put together with an oenologist and bottled at the estate.
