Jean-Pol Hautbois is a champagne house based in Pévy, in the heart of the Massif de Saint-Thierry, with a history going back to 1829 and five generations of winegrowers. The brand name was officially launched in 1976, and the estate is currently run by Sandrine and Fabien Hautbois, who combine family tradition with modern, sustainable practices.
Vineyards and Grape Varieties
The estate has 8 hectares of vineyards, grown from the original 6 hectares, located on the slopes of Pévy (Latin name Pes Vitis, "at the foot of the vines"). Cultivation covers the three main Champagne varieties: Chardonnay, Pinot Noir and Pinot Meunier. Forgotten varieties have also recently been introduced, including Arbane, Petit Meslier and Pinot Gris, which increases the diversity and complexity of the champagnes.
Winemaking and Sustainability
The viticultural process is certified under HVE (Haute Valeur Environnementale) and VDC (Viticulture Durable en Champagne). The focus is on respect for the terroir and tradition, with methods such as:
- Enherbement (ground cover between the rows) for soil health.
- Mechanical weed control and ploughing.
- Yield management to guarantee quality.
- Ageing of the traditional range for at least 36 months in cellars.
Champagnes
The range varies from blends to single-varietal and vintage champagnes, with scores that often exceed 89-92/100 in guides such as Gault&Millau. Key cuvées are:
- Cuvée Achille: A Blanc de Blancs (100% Chardonnay), often vintage, known for its elegance.
- Tradition: A blend of mainly Pinot Meunier and Pinot Noir.
- Grande Réserve: A blend of 50% Chardonnay and 50% Pinot Noir, often with longer ageing.
- Rosé: Made from Pinot Noir, Pinot Meunier and Chardonnay, sometimes with the addition of red wine.
- Haut'entic / Haut'rigine / Haut'dacieuse: Special cuvées that emphasise the diversity of the varieties, including Arbane and Petit Meslier.
Visitors can visit the estate at 15 Rue du Travy (or 17 Rue des Vignes, depending on the source) in Pévy, with opening hours on weekdays and by appointment at weekends.
