Frédéric Thiébault is a family wine-growing estate in Pargny-lès-Reims, on the slopes of the Montagne de Reims. Son Fabian represents the sixth generation of growers and is following in his father's footsteps.
Vineyards The family vineyard lies mainly in Pargny-lès-Reims, Jouy-lès-Reims, Écueil and Chamery, all classified Premier Cru. Meunier is the favoured grape on these clay-limestone soils and makes up the majority of the plantings, complemented by Chardonnay and Pinot Noir. The vines are spread over some forty plots, with names such as les Écus, la Maine Blanche, le Jardin, le Mont des Chrétiens and les Bonnes Fontaines.
Methods The grapes are picked by hand at full ripeness. The estate holds the double certification Haute Valeur Environnementale level 3 and Viticulture Durable en Champagne. Depending on the cuvée, the wines age for up to 10 years in the cellar.
Champagnes The range comprises eight cuvées, from the Brut and the Réserve to the blanc de blancs La Maine Blanche, the vintage Harmonie 2012 and Les Crayères by Fabian, an undosed blanc de noirs from Pinot Noir and Meunier and Fabian's first creation.
