Champagne François Vallois is a family business based in Bergères-les-Vertus (Marne, 51130), located at the foot of the Mont-Aimé and the prestigious Côte des Blancs, 20 km south of Épernay. The operation has been in family hands for four generations, with François and Brigitte Vallois currently in charge of production and sales.
The vineyards are managed with passion and respect for tradition, combined with modern techniques such as culture raisonnée (balanced cultivation). This includes natural soil amendments (bark on the soil) and carefully considered phytosanitary treatments to ensure the quality and sustainability of the 1er Cru vineyards. The Chardonnay-dominant terroirs lie on chalky soil, ideal for elegant champagnes.
The range mainly comprises Blanc de Blancs (100% Chardonnay) and blends:
- Cuvée Vieilles Vignes "Les Falloises": A 100% Chardonnay from 70-year-old vineyards, known for its pure expression of the terroir.
- Réserve Brut: A classic blend of Chardonnay and Pinot Noir.
- Rosé de Saignée and Brut Rosé: Made from Pinot Noir and Chardonnay.
- Millésimés (vintages) and Demi-Sec variants.
Visitors can visit the cellar and tasting room for tastings of their full range, including Ratafia Champenois.
