History and Location
The estate is a family business based in the commune of Hermonville. The location draws on traditional champagne production in the Marne region, with a focus on the specific terroirs of the Saint-Thierry massif.
Vineyards
The vineyard area is estimated at 7 to 8 hectares.
- Location: Three quarters of the vineyards are planted on slopes (coteaux).
- Grape varieties: The blend consists of Pinot Meunier (50-60%), Pinot Noir (30%) and Chardonnay (10-20%).
- Terroir: The soil consists of sands (Thanetian, Cuisian), loam (Sparnacian), limestone (Lutetian), chalk (Campanian) and marl.
- Cultivation: Viticulture is practised according to the principles of raisonné viticulture (balanced viticulture).
Method
The champagne is produced according to the traditional method.
- Vinification: The grapes are fermented in stainless steel vats.
- Malolactic fermentation: Carried out for the white wines.
- Filtration: The wines are filtered but not fined (no collage).
- Remuage (Riddling): Riddling of the bottles is done mechanically with gyropalettes.
- Dégorgement (Disgorgement): The sediment is removed by ice disgorgement (dipping in brine at about -25°C).
- Ageing: The champagnes age on the lees (sur lattes) in bottles.

The range varies in price and type, with many cuvées under €20 and a few prestige vintages.
