Champagne E. Hamm & Fils is a historic champagne house based in Aÿ, founded in 1910 and active as a négociant-manipulant since 1930. In late 2024 the family business was taken over by the Iconic Nectars group, which also owns the prestigious Gosset brand, a step the family saw as an opportunity to preserve the heritage. The house combines more than a century of tradition with modernity and is known for its independent creative freedom.
Hamm's method is characterised by not applying malolactic fermentation, which results in fresh, clear wines. The third generation of the family sources grapes (Chardonnay and Pinot Noir) from 15 different crus in the region. The blends are carefully composed from the three iconic grape varieties (Pinot Noir, Meunier, Chardonnay) coming from the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs, with the cellar master aiming for a balance between elegance and finesse.
Hamm's champagnes include a classic Brut (40% Pinot Noir, 20% Meunier, 40% Chardonnay, dosage < 6 g/l) with aromas of peonies and brioche, and a Millésime 2016 that ages for 8 to 10 years. A striking speciality is the 100% Pinot Noir Millésime 2019. In addition, the house produces Ratafia Champenois, a fortified drink made from grape juice and brandy, aged in oak barrels. Visitors can tour the cellars, the disgorgement room and the packaging line by appointment, with tastings available for adults.
