History: The estate was founded in 1966 by Gérard and Ginette Delong in Allemant. In 1980 they left the cooperative to work as independent producers. Marlène Delong took over the management in 2000, followed by her husband Damien in 2008, who focuses on the vineyard while Marlène manages the cellar and the business.
Vineyards: The 5.3 hectares of vineyards are divided over the villages of Allemant, Broyes and Sézanne in the Côteaux Sézannais. The soil consists of a mix of chalk, sand, loam, loess and limestone, which offers diversity in the wines. The grape varieties are Chardonnay, Pinot Noir and Pinot Meunier, with an average vine age of approximately 40 years.
Approach: The viticulture is geared towards sustainability and biodiversity. Since 2023 the estate has been officially certified Organic (AB), although organic practice has been applied for longer. There is little intervention in the process: minimal sulphite addition, use of indigenous yeasts and bacteria, and a minimum ageing of 3 years in the bottle to preserve the terroir characteristics.
Champagnes: The house produces various cuvées, including Esprit Nature (e.g. Chardonnay and Pinot Noir), Cuvée Zéro, Ter Originel and Grande Réserve. The champagnes are known for their natural expression, low sugar content (often Brut Nature or Extra Brut) and complexity thanks to the separate vinification of plots.
