History: Champagne Dauby was founded in 1956 by Thérèse Tissier and Guy Dauby, who shared their passion for the earth and wine. Succession passed through their daughter Francine Dauby (since 1990) and granddaughter Flore Dauby (since 2007). After Flore's death in 2018 the estate is currently run by her husband Teddy Samato, with the name "Mère et Fille" (Mother & Daughters) emphasising the family heritage and the feminine influence in winegrowing.
Vineyards: The estate has 8 hectares of vineyards, mainly located in Aÿ (a Grand Cru village) and Mutigny (Premier Cru), with additional plots in Mareuil-sur-Aÿ, Avenay and Barbonne-Fayel. The grape varieties are 60% Pinot Noir and 40% Chardonnay (other sources give 70/30 or 80/20). The vineyards are certified Haute Valeur Environnementale (HVE) and part is farmed organically, opting for ground cover over herbicides and minimal disease control.
Approach: The philosophy revolves around harmony with nature, with the wine having to reflect what the terroir offers. A distinguishing feature is the use of oak barrels and foudres for raising reserve wines and specific cuvées, which contributes to complexity and woody notes. The winemakers emphasise respect for the environment and biodiversity, and produce champagnes that are often described as elegant, floral and terroir-driven.
Champagnes: The range includes various cuvées with different price classes and styles:
- Réserve Brut Premier Cru: The house signature, a balance between Pinot Noir and Chardonnay, with reserve wines raised in oak barrels.
- Blanc de Noirs Brut Premier Cru: Single-variety Pinot Noir from Mutigny, characterised by power and structure.
- Blanc de Blancs Brut: Limited production of 100% Chardonnay, with five years on the lees.
- Cuvée Guy Dauby Brut Grand Cru: A tribute to the founder, raised in oak barrels (12-18 months) with a minimum of 4 years' ageing in the cellar.
- Rosé: Obtained by blending with a red wine aged for a year in oak barrels.
- Flore: A cuvée containing reserve wines from oak barrels, often an Extra Brut.
- Millésime: Vintage champagnes, such as the 2014, known for their depth and woody notes.
