Champagne Clément & Fils is a small family estate in Congy, in the Coteaux du Petit Morin between the Côte des Blancs and the hills of the Sézannais.
- History: The estate was built up by the grandfather of the current winemaker. Aurélien Clément studied viticulture in Avize, represents the fourth generation and took over the estate in 2017.
- Vineyards and terroir: The vineyards lie in Congy and Coizard-Joches. In the lieu-dit Les Cornambeaux in Congy there are vines planted in 1961.
- Approach and style: From his very first harvest Aurélien stopped using herbicides; the estate is now fully certified organic. The vineyards are ploughed by horse, fermentation uses native yeasts and dosage is low. The names of the cuvées refer to the plants and flowers that grow between the rows.
- Cuvées: Myosotis Champêtre (named after the forget-me-not) combines the latest vintage with reserve wines from the three previous years and all of the estate's grape varieties. Adonis Annua is named after a rare plant that has returned to the vineyards. Other cuvées include Les Cornambeaux (blanc de blancs), La Godarde and Les Ombelles (100% Meunier).
