Champagne Boutillez-Marchand is a family business based in Villers-Marmery (Marne, Montagne de Reims), founded in 1960 by Robert Boutillez and Françoise Marchand as a Récoltant-Manipulant. Since 1997 the house has been run by Marion Boutillez, who has been assisted since 2007 by Jean-Michel Sourdet.
Vineyards and Terroir
The estate manages 6.40 hectares of vineyard in the Premier Cru zone of Villers-Marmery, with a unique profile of 97% Chardonnay and 3% Pinot Noir. The soil consists of a mix of clay-limestone and chalky layers, which contributes to the finesse of the wines. The vines are grown using controlled pest management (lutte raisonnée), with Marion and Jean-Michel spending more than 520 hours per hectare per year on manual work.
Approach
Production is characterised by a minimum of three years' ageing in the cellar, which gives a complex flavour profile. A specific technique is batonnage (stirring of the yeasts) during vinification in oak barrels, applied especially to the top cuvées. The champagnes are known for their elegance, balance and expression of the Chardonnay terroir.
Champagnes and Cuvées
The range focuses strongly on Chardonnay and includes:
- Blanc de Blancs Brut: A premier cru of 100% Chardonnay.
- Millésime: Vintage champagnes, such as the 2004 and 2015.
- Rosé: A blended rosé (90% Chardonnay, 10% Pinot Noir).
- Cuvée Écrin n°1: A high-quality Blanc de Blancs aged entirely in oak barrels.
- Ratafia: A fortified wine based on Chardonnay, aged in barrels more than ten years old.
The house is recognised by Gault & Millau (included in the 2020 guide) and the Ratafia won silver at the Concours Général Agricole in Paris (2015 and 2017). Visits and tastings are possible at: 21 rue Pasteur, 51380 Villers-Marmery.
