Champagne Bonnet-Ponson is a family business in Chamery (Montagne de Reims) that goes back to 1862, with the current name since 1957. The estate is now run by Cyril Bonnet (6th generation), who has worked fully organically since 2013 (certification 2016).
- History: Founded by Grégoire Bonnet; merger Bonnet-Ponson in 1957; expansion to Verzenay (Grand Cru) in 2003.
- Vineyards: 10.5 hectares spread over Premier Crus (Chamery, Vrigny, Coulommes-la-Montagne) and Grand Cru (Verzenay); the average age of the vines is 35 years.
- Cépages: 38% Pinot Noir, 29% Pinot Meunier, 29% Chardonnay and 4% Petit Meslier.
- Approach: No synthetic pesticides; use of native yeasts; ageing on total dead yeasts (9-10 months); low or no addition of sulphur; often unfiltered.
- Champagnes: Cuvées such as Jules Bonnet, Le Jour, Cuvée Perpétuelle and Seconde Nature; many Extra Brut and Non Dosé variants.
