Bernard Hatté & Fils is a Récoltant-Manipulant champagne house based in Verzenay (Grand Cru) on the Montagne de Reims, known for its elegant champagnes with a strong terroir character.
History
- The house was founded in 1952 by Louis Hatté, a former chef-vigneron at Roederer, who decided to produce his own champagne after decades of selling grapes to large houses.
- His son Bernard Hatté learned the trade from 1954 onwards and later took over the business.
- Since 1986 the estate has been run by Christophe Hatté, who continues the tradition of quality and craftsmanship.
Vineyards and Terroir
- The estate manages approximately 8.5 hectares of vineyards, largely located in Verzenay (Grand Cru) and additionally in the Vallée de l'Ardre.
- The soil is rich in chalk and limestone, which contributes to the freshness and finesse of the wines.
- The grape varieties are Pinot Noir and Chardonnay on the Montagne de Reims, and Pinot Meunier in the Ardre valley.
- Viticulture is raisonné (balanced) and the grapes are harvested by hand.
Approach
- Vinification takes place in stainless steel tanks and partly in oak foudres to add complexity.
- Malolactic fermentation is applied for the white champagnes.
- Remuage (turning of the bottles) is done mechanically with gyropalettes.
- Dégorgement (removal of the yeast deposit) is done by the freezing method (dégorgement à la glace) at approximately -20°C.
- The champagnes undergo a minimum ageing of 12 to 16 months on the lees.
