Champagne Christophe Mignon is an artisanal champagne house based in Festigny (Vallée de la Marne), founded in 1983 by Christophe Mignon, who belongs to the fifth generation of winegrowers managing the estate since 1882. The estate is known for its dedication to Pinot Meunier, demonstrating the quality of this often underestimated grape by producing mainly 100% Meunier cuvées.
The vineyards cover approximately 6 to 6.5 hectares divided over some thirty plots in Festigny and Le Breuil, with an average vine age of 45 to 51 years. The soil is argilo-limono-calcaire (clay-silt-limestone) and the estate is fully organised in biodynamic farming (phytotherapy, homeopathy, geobiology), following the traditional "alternative" methods of their ancestors to safeguard the balance between earth and plant.
In the cellar they work with steel and enamelled tanks, avoid stainless steel and barrels (except for specific cuvées), and do not allow malolactic fermentation to take place. The champagnes are generally Brut Nature or Extra-Brut with a very low sulphite content (around 40 mg/l), resulting in fresh, mineral and pure wines.
Some characteristic champagnes are:
- ADN DE MEUNIER: A 100% Pinot Meunier Blanc de Noirs, often in Brut Nature or Extra-Brut, known for its pure fruit and mineral profile.
- ADN de Foudre: A cuvée aged in oak foudres (e.g. Chardonnay or Meunier), which gives a capricious and toasty character.
- Coup de Foudre: An exception to the rule, which is not 100% Meunier and has a different profile.
